- Our food comes from two sources, Vegetables
and animals. Bulk of the food is made up of three main
ingredients in varying proportions; proteins which are
body building substances, carbohydrates which are broken
down into sugar to give you ready energy and fats which
act as a reserve source of energy.
- The foods in their natural form contain
enough salts, including sodium chloride (Common Salt)
and sugar in the form of carbohydrates. We hardly need
these items in the refined form except for taste. Excess
of salt can elevate blood pressure and excess of crystal
sugar raises the blood sugar, which naturally occurring
compound carbohydrates do not. It is fattening too.
The use of these two items should be minimum compatible
with taste and requirement.
- Fibre is indigestible matter occurring
only in the vegetarian food. It is not found in animal
foods. The soluble fibre occurs in certain fruits and
vegetables. It retards the digestion of complex carbohydrates
into sugar and slows down its absorption. It thus prevents
the sudden rise of blood sugar and helps provide energy
to the body for a longer period.
- In this way it helps control and prevent
diabetes. Carbohydrates particularly refined sugar can
also be converted by the body into fats when they are
eaten in excess of needs of the body. And they produce
obesity in individuals.
